Ingredients

  • 3 medium or 2 large zucchini
  • 2 large eggs beaten
  • 1 ½ cups panko breadcrumbs
  • ¾ cup grated Parmesan cheese
  • 2 teaspoons Italian seasoning
  • ½ cup all-purpose flour
  • ½ teaspoon kosher salt
  • Black pepper to taste

Instructions
 

  • Preheat your air fryer to 370 degrees F. Rinse and dry the zucchini. Trim the ends, then cut each zucchini in half. Slice each piece in half lengthwise, then quarter each in as needed to create skinny “fries”. You should get about 24 pieces from each zucchini.
  • In a wide, shallow bowl, whisk eggs. In a separate bowl, combine breadcrumbs, Parmesan, and Italian seasoning. In a third bowl, whisk together the flour, salt, and pepper. 
  • Working in batches, dredge zucchini in flour, shaking off the excess. Dip into egg, then roll through the breadcrumb mixture, pressing to coat.
  • Place the coated fries in the basket of the air fryer and spray lightly with cooking spray. Air fry for 8 minutes, then flip and fry an additional 6-8 minutes, until golden brown and tender. Remove and repeat with the remaining fries. Serve with your favorite dipping sauce.

Notes

How to reheat zucchini fries:

1. Preheat your air fryer to 370 degrees.
2. Add zucchini fries to the basket and cook for 6-8 minutes or until crispy and heated through.
