Peel your carrots. Cut each carrot in half to make shorter fries. Then cut them lengthwise in half and then half them again lengthwise. They should all be about the same size for even cooking.
In a small bowl combine the cornstarch, parsley, garlic powder, and salt. Place your carrots in a dish and drizzle your olive oil over them. Next, sprinkle the seasoning over the carrots, mixing them till they are coated evenly.
Place them in a single layer in your air fryer basket. Cook for 13 to 15 minutes. They should be fork tender but hold their shape when held up. Let them rest for just a few minutes, allowing them to crisp up a little bit more. Place them on a plate and sprinkle with parmesan cheese. Serve immediately.
