3 Ingredient Pumpkin Cookies with Spice Cake Mix

My 3 ingredient pumpkin cookies come together with spice cake mix, pumpkin puree, and chocolate chips. The cake mix already has the flour, salt, and spices, and the pumpkin adds enough moisture that you skip the eggs and butter. They are soft, not too sweet, and go from bowl to plate in about 15 minutes.

  • 1 (15-ounce can) pumpkin purée
  • 1 (15.25-ounce box) spice cake mix I used Duncan Hines
  • 1 ¾ cups milk chocolate chips divided

Instructions

  • Preheat the oven to 350°F and line two large cookie sheets with parchment paper.
  • Place pumpkin purée and dry cake mix into a large bowl and stir until fully combined.
  • Fold in 1 ¼ cups of the chocolate chips into the batter and mix until just blended.
  • Using a medium cookie scoop, scoop individual cookies, spacing them 2 inches apart.
  • Gently press each cookie to flatten it slightly.
  • Bake the cookies for 10 to 12 minutes. They are done when a toothpick is inserted and comes out clean.
  • While the cookies are still warm, press the remaining chocolate chips into the tops of the cookies.

Notes

Let the cookies cool on the sheet for about 5 minutes before moving them. They firm up as they cool.
