Sweet Potato Cream Cheese Pie

- Store-bought pie crust - Cream cheese, softened - Granulated sugar - Large egg - Pure vanilla extract - Canned yams, drained well - Light brown sugar - Heavy cream - Ground cinnamon

Mix together the softened cream cheese and granulated sugar for about 2 minutes.

Step 1 

Add the egg and vanilla extract and mix. Pour the cream cheese mixture into the prepared pie crust. Transfer to the fridge.

Step 2

Add the yams and light brown sugar to a food processor and pulse for 30 seconds.

Step 3

Add the heavy cream, egg, vanilla extract, and ground cinnamon and pulse. Spoon the sweet potato mixture over the cream cheese layer.

Step 4

Bake for 35-40 minutes. Allow the pie to cool completely then transfer it to the fridge and chill for at least 2 hours.
