Pumpkin Cheesecake Cookies

Soft & tender pumpkin spice cookies are topped with satiny sweet & tangy cream cheese to create the perfect holiday treat!


FOR THE PUMPKIN SPICE COOKIES – Unsalted butter – Light brown sugar – Pumpkin pie mix – Large egg – Pure vanilla extract – Graham cracker crumbs – All purpose flour – Pumpkin pie spice – Baking soda FOR THE CHEESECAKE FROSTING – Cream cheese – Unsalted butter – Pumpkin pie mix – Powdered sugar – Pure vanilla extract

In a stand mixer, cream the butter & brown sugar together. Mix in the vanilla, egg & pumpkin puree.

Step 1

Mix in the flour & the baking soda, along with the graham crackers crumbs & pumpkin spice.

Step 2

~ Scoop out portions of dough & roll into smooth balls. ~ Roll each cookie dough ball in a pumpkin pie spice & graham cracker mix!

Step 3

~ Place them on the prepared baking sheet. ~ Flatten each to about ½ inch thick.

Step 4

Bake until the edges of the cookies are just set. Cool completely on the baking sheet!

Step 5

Meanwhile, make the easy cheesecake frosting.

Step 6

Once the cookies have cooled, pipe on the frosting & sprinkle with the remainder of the pumpkin spice + graham cracker mixture!
