Raspberry White Chocolate Cake

Ingredients

– Salted butter, softened – Granulated sugar – Large eggs – Pure vanilla extract – All purpose flour – Baking powder – Fresh raspberries – White chocolate chips

Add the butter & sugar to the bowl of a stand mixer. Beat until light & fluffy.

Step 1

Add the eggs one at a time, followed by the vanilla & mix to combine. Mix in the dry ingredients.

Step 2

Pour ⅓ of the batter into the loaf pan, then sprinkle in 1 cup of raspberries and ¼ cup of white chocolate chips.

Step 3

Pour another ⅓ of the batter into the pan, then add the rest of the berries and white chocolate chips. Top with the rest of the cake batter.

Step 4

Bake and then let the loaf cool in the pan for at least 30 mins.

Step 5

Drizzle the glaze over the cake & top with additional raspberries.
