Quick Buffalo Chicken Pasta Bake

– Uncooked ziti – Olive oil – Boneless chicken breast – Ranch seasoning – Butter – All purpose flour –  Milk – Homemade buffalo sauce – Shredded cheddar cheese – Shredded pepper jack

Cook the ziti to al dente according to the package directions.  Drain the pasta and set aside.

Step 1

In a pot over medium-high heat, add the olive oil. Sprinkle the cubed chicken with kosher salt, ranch seasoning, and black pepper. Toss to evenly coat.

Step 2

Add the chicken to the pan and sear for 1-2 minutes per side. Remove and set aside.

Step 3

Melt butter in the pan. Add the flour and whisk until a roux forms. Cook whisking constantly, for 1 minute.

Step 4

Add the milk and buffalo sauce. Whisk. Bring the sauce to a simmer and cook. Reduce the heat to low and add cheddar cheese and pepper jack cheese.

Step 5

Remove the pan from the heat and add the cooked pasta, cooked chicken, green onion, and blue cheese crumbles. Stir to combine.

Step 6

Transfer to a greased pan and top with cheddar and pepper jack cheese. Bake for 15-18 minutes. Garnish and serve!
