– Bell pepper – Flour – Velveeta – Dijon mustard – Tex-Mex cheese – Taco seasoning – Pickled jalapeño peppers – Pasta, cooked to al dente – Green onion – Crushed tortilla chips

In a saucepan, combine the butter and bell pepper over medium-high for  about 4 minutes.

Add the flour and stir.  Add the milk, Velveeta, and Dijon mustard and cook for 6 minutes.

Add the shredded cheese, taco seasoning, pickled jalapeño peppers, salt, and pepper. Stir until melted.

Pour the cheese sauce over the cooked pasta and stir. Pour the cheesy pasta into a 9x13 baking dish.

Top with green onions and the crushed tortilla chips. Bake for 20 minutes. Top with fresh cilantro.
