EVERYDAY FAMILY COOKING

– Olive oil – Italian sausage – Onion – Minced garlic – Chicken broth – Diced tomatoes – Italian seasoning – Refrigerated three cheese tortellini – Baby spinach – Heavy cream

Press Saute on the Instant Pot. Heat the olive oil. Add the sausage and onion. Stir and cook until browned.

Add the garlic and cook. Press Cancel. Add chicken broth, tomatoes, Italian seasoning, salt, and pepper.

Cook on Manual High for 1 minute. Allow a 5-minute natural pressure release. Release remaining steam.

Press Saute. Stir in the tortellini, bring the soup to a simmer, and cook for 2 minutes.

Stir in the cream and spinach, loosely cover the pot with the lid, and let  simmer for 3-4 minutes.

Serve garnished with fresh basil and Parmesan cheese!
