Sweet Potato Pie in a Graham Cracker Crust

In a bowl, mix the graham cracker crumbs, granulated sugar, melted butter, and honey until well combined.

Press mixture into the pie dish. Bake for 8 minutes and then set it aside.

Peel sweet potatoes and cut into cubes. Add to a pot, then add water. Bring to a boil over high heat and cook for about 15 mins.

Drain, then puree them in a food processor. Add sweet potato puree to a bowl with the remaining ingredients.

Pour the sweet potato filling into the graham cracker crust and bake for 35-40 minutes.

Let cool fully to room temperature and then transfer it to the fridge to chill for at least 2 hours. Enjoy!
