EVERYDAY FAMILY COOKING

- Spaghetti squash - Unsalted butter - Minced garlic - All-purpose flour - Milk - Parmesan cheese - Lemon juice - Italian Seasoning - Baby spinach - Cooked chicken - Mozzarella cheese

Preheat oven to 400F and line a baking sheet. Slice the squash in half and scoop out the seeds. Spray with cooking oil spray.

 Sprinkle with salt and pepper. Place cut side down, on the baking sheet and poke holes all over it. Roast for 30-40 minutes.

Melt butter in a skillet set over medium heat. Add garlic and cook for 30-60 seconds. Whisk in flour, and cook for 2 minutes.

Gradually whisk in milk. Simmer until thickened. Whisk in Parmesan, lemon juice, Italian seasoning, salt and pepper.

Add spinach and stir, then remove from heat and fold in  chicken. Scrape out the spaghetti-like strands. Stir them into the mixture.

Place the squash boats on the baking sheet and divide the mixture between them. Sprinkle mozzarella cheese on top.

Bake for 10 minutes, then broil on high for 1-2 minutes. Garnish with fresh parsley.
