Mashed Potatoes without Milk

– Russet potatoes – Reserved potato water  – Unsalted butter, softened – Salt and pepper

Place cubed potatoes in a pot and add water. Add salt and bring the water to a boil, cooking for 15-20 minutes.

Step 1 

Drain potatoes, reserving some potato water, Return potatoes to the pot. Add the butter and mash it into the potatoes.

Step 2

Slowly add the reserved potato water and cream cheese, blending it in with a potato masher.

Step 3

Season with salt and pepper to taste. Serve!
