– Olive oil – Yellow onion – Russet potatoes – Salt and Pepper – Vegetable broth – Milk 

Heat olive oil in a Dutch oven set over medium-high heat. Add the onion and saute for 5 minutes.

Stir in the potatoes and season with salt and pepper. Add broth and bring to a boil.

Reduce heat to medium, cover, and simmer for 20 minutes. Remove from the heat and stir in the milk.

Using an immersion blender, blend the soup until smooth.

Stir in any additional optional ingredients, and serve with toppings!
