Ingredients

  • 4 boneless pork chops about 1 inch thick or more (center-cut chops with some fat for added moisture)
  • 3 tablespoons olive oil
  • 1 tablespoon paprika
  • 1 tablespoon brown sugar
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon Italian seasoning
  • 1 teaspoon kosher salt
  • 1/2 teaspoon ground black pepper

Instructions
 

  • Preheat the oven to 350 degrees F.
  • In a small bowl, combine the olive oil, paprika, brown sugar, garlic powder, onion powder, Italian seasoning, salt, and pepper.
  • Mix the dry rub well with a spoon or whisk until well combined.
  • Place the thick, boneless pork chops on a baking dish, rimmed baking sheet, or in an oven-safe cast-iron skillet.
  • Use your hands to rub the spice mixture evenly over both sides of each chop as well as the sides of the chops. Make sure the chops are fully coated.
  • Let the coated pork chops sit at room temperature for a cooking time of 15-30 minutes so the flavor can soak into the meat.
  • Bake the thick chops for 25-30 minutes in the 350 degrees F oven, flipping once halfway through, until the internal temperature reaches 145 degrees F on a meat thermometer.
  • Let the tender pork chops rest for 5 minutes before serving.

Notes

  • You can cover the raw seasoned pork chops with aluminum foil or plastic wrap and refrigerate overnight.
  • Check the temperature by inserting the thermometer into the thickest part of the oven-baked pork chops.
  • Serve with side dishes like mashed potatoes, broccoli, sweet potatoes, Brussels sprouts, or green beans.
