Instructions
Preheat the oven to 350 degrees F.
In a small bowl, combine the olive oil, paprika, brown sugar, garlic powder, onion powder, Italian seasoning, salt, and pepper.
Mix the dry rub well with a spoon or whisk until well combined.
Place the thick, boneless pork chops on a baking dish, rimmed baking sheet, or in an oven-safe cast-iron skillet.
Use your hands to rub the spice mixture evenly over both sides of each chop as well as the sides of the chops. Make sure the chops are fully coated.
Let the coated pork chops sit at room temperature for a cooking time of 15-30 minutes so the flavor can soak into the meat.
Bake the thick chops for 25-30 minutes in the 350 degrees F oven, flipping once halfway through, until the internal temperature reaches 145 degrees F on a meat thermometer.
Let the tender pork chops rest for 5 minutes before serving.

Notes
You can cover the raw seasoned pork chops with aluminum foil or plastic wrap and refrigerate overnight.
Check the temperature by inserting the thermometer into the thickest part of the oven-baked pork chops.
