Ingredients

  • 1 red bell pepper
  • 1 zucchini
  • 4 ounces sliced mushrooms
  • ½ red onion
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon dried parsley
  • ¼ teaspoon cumin
  • salt and pepper to taste
  • 1 tablespoon olive oil
  • ¼ teaspoon red pepper flakes optional

Instructions
 

  • Wash and prepare the vegetables.  Slice the vegetables so that they are similar in size. 
  • Combine all of the seasonings in a small bowl.  
  • Toss the vegetables with the seasonings and olive oil. 
  • Preheat the air fryer to 380 degrees. Cook the vegetables in a single layer, cooking in batches if needed, for 8-10 minutes, flipping the veggies at the 6-minute mark. 
  • Serve and enjoy!
