Ingredients

  • 1 ½ pounds of small potatoes
  • 2 cups cold water
  • 1 tablespoon fresh thyme or 1 teaspoon dried thyme
  • ½ tablespoon minced garlic
  • ½ tablespoon olive oil
  • Juice of 1/2 a lemon about 2 tablespoons of a medium size lemon
  • Salt to taste

Instructions
 

  • Wash your potatoes and dice them into small cubes. The closer they are in size, the more evenly they will cook. 
  • Soak the cut potatoes for 10 minutes in cold water. This will help remove some starch and allow them to crisp up more. Once they have soaked, drain them and then pat them dry with a paper towel.
  • Combine potatoes with the thyme, garlic, olive oil and lemon juice. 
  • Place diced potatoes in your air fryer basket. Cook at 380 degrees F for 20 to 25 minutes, giving the basket a good shake at the 10 minute mark.

Optional 

Sprinkle more fresh thyme to the potatoes before serving or some zest from your lemon, or both!

How to Reheat Diced Potatoes in the Air Fryer

  1. Preheat the air fryer to 350 degrees F.
  2. Lay the leftover diced potatoes in the air fryer basket in a single layer.
  3. Cook for 3 to 5 minutes until heated through.
