Instant Pot  Potato Salad

Ingredients

– Potatoes, peeled and cut – Salt & pepper – Eggs – White onion, diced  – Mayonnaise – Dill – Mustard – Paprika

Place cubed potatoes into Instant Pot and add 4 cups of water. Add the salt, then place the eggs right on top of the potatoes and water.

Step 1

Close the lid and turn the Instant Pot to high pressure for 0 minutes. Once complete, quick release the pressure.

Step 2

Remove the eggs, then peel and cube them once cooled. Drain the potatoes and place back into the Instant Pot.

Step 3

Add the chopped onions, chopped eggs, mayonnaise, dill, mustard and seasoning to the potatoes - mix well.

Step 4

Remove from Instant Pot and enjoy immediately or store inside the fridge for up to 3 days!
